Vinification

Hand-picked -Vinification of whole bunches (traditionnal in Beaujolais) - Made using carbonic maceration during 8 days -Maturing in ciment vat 6 month.
Vinification is carried out in open vats, with cap-punching morning and evening and scrupulous temperature control, followed by maceration of the wine "on its crust" for a period of about 8 days.
