Wine-grower word

Garnet red color, our Chénas old vines is high red wine ageing in oak barrels so as not to extract too steep wooded side but a finesse on a light vanilla . Located in the town of Chénas , it remains the Burgundy raw. You will delight in its wood aromas, a range of aromas that include vanilla, coffee, florals notes, notes of cherries, plums and cassis combined with light woody flavor.

Vinification

Hand-picked -Vinification of whole bunches (traditionnal in Beaujolais) - Made using carbonic maceration during 10 days -Maturing in ciment vat 6 month.
Vinification is carried out in open vats, with punching of the cap and scrupulous temperature control, followed by maceration of the wine "on its crust" for a period of about 10 days

Game terrine , foie gras, salad and tapenade chest . Grilled Beef, T-Bone , Epoisse , Fourme d'Ambert , Roquefort cheese, Morbier, chocolate mousse , tartlet amandine pear with red wine .
